Jonathan & Didier Pabiot 'Léon' 2021

Pouilly-Fume at his best. A truly pure sauvignon blanc in your glass, in the broadest sense of the word. The grapes are picked by hand and with a low yield of 30 hl/ha only the best remains. There are 3 types of vineyards with subsoil, each of which gives its own character to the grape and the wine: kimméridgiennes, portland lime and flint. After the harvest, this wine is placed in concrete cuves with wild yeasts, the aging lasts 16 months. This wine is rich in the nose with notes of lemon zest, a hint of passion fruit and white peach. During the tasting we notice apple and citrus fruits and in the aftertaste we are rewarded with a slightly smoky touch and a fine minerality, perfectly balanced with the acidity. This wine dances in your glass and when you taste it you feel like 'God in the Loire'. health!
