Pouilly-Fuissé is always characterized as one of the ripest and most full-bodied chardonnay wines from Burgundy. This is due to its unique location in the South of Burgundy and the special orientation of the vineyard, like a kind of amphitheatre. The grapes ripen on a solid limestone and clay soil and partly thanks to the microclimate, they get their concentration. The grapes are harvested by hand and transferred by gravity to a pneumatic press where the purest juice is gently squeezed from the grapes. Fermentation continues in demi-muids of 600 liters of French, followed by a one-year aging on the lees. On the palate, the round, creamy and spacious body of the wine is dominated by the ripe fruit and mouth-filling texture. Ending with soft-fresh acidity that provides balance and a salty aftertaste that makes it difficult not to refill the glass immediately.
