Matching wines with hareback

Back of hare is probably one of the most popular pieces of small game and much loved by us Belgians. With its dark red, tender flesh, hare is very often combined with the two classic sauces, called Harlequin. In combination with this dish, we would like to propose the most concentrated and rich wines, which can offer some resistance to the power and intensity of this hearty game.
Do you opt for a slightly younger powerhouse? Then definitely use a carafe to give some extra oxygen, the winemaker will thank you . Great wines are often humble in their youth... They need a little extra time and oxygen to show everything they have. So a carafe gives you 'figuratively' much more wine...
