Crystallum Clay Shales chardonnay 2023

Crystallum, located in the breathtaking Hemel-en-Aarde Valley of South Africa, is a family-run estate led by brothers Andrew and Peter-Allan Finlayson. Since its founding in 2007, the estate has focused exclusively on pinot noir and chardonnay, with vineyards planted on carefully selected top sites. The result is wines that are refined, elegant, and profound, with an expressive terroir character.

The Clay Shales Chardonnay is a single-vineyard wine from a unique site on the Hemel-en-Aarde Ridge. Its location is exceptional: sheltered by the shadow of the mountains at significant altitude above sea level, yet close to the ocean, which provides cooling and moderates daily temperatures. The name ‘Clay Shales’ refers to the vineyard’s characteristic clay and shale soils. The combination of this outstanding site and premium soils produces a wine of impressive proportions, with finesse and depth reminiscent of Grand Cru wines.

This chardonnay, especially in its youth, benefits from extra oxygen after opening. Using a wide decanter and generous wine glasses helps the wine express itself fully. The aromas and flavors are intense and powerful, yet its true quality lies in the subtle nuances and complexity of the nose and palate.

The vinification is carried out by gently pressing whole bunches, followed by spontaneous fermentation in large foudres without the addition of enzymes, SO₂, or commercial yeasts. After alcoholic fermentation, the wine ages for 10 months in a 2600L foudre, developing a harmonious structure and elegant complexity.
