Regular price €24,70The Valpolicella Ripasso Classico Superiore from the Gorgo winery is a complex, full-bodied red wine with depth and refinement. This wine is made using a unique method in which the base wine of Valpolicella undergoes a second fermentation on the press cake of Amarone wines. The grapes for the Valpolicella are harvested by hand, pressed and fermented in stainless steel tanks. After a maceration of about 15 days, the wine rests until January or February, when the press cake of the Amarone becomes available.
During the second maceration on this press cake, the wine gains concentration, structure and complexity. The wine then matures in large wooden vats of 5000 litres, which contributes to a harmonious, ripe and round texture without losing the fresh acidity and liveliness.
On the nose, the Valpolicella Ripasso offers an inviting aroma of fresh and candied red and black fruits, such as cherries and plums, complemented by subtle hints of sweet spices such as pepper and cinnamon. In the mouth you immediately experience a fuller body with firm, yet refined tannins and juicy acids. The long and balanced finish testifies to the meticulous work in the vineyard and the patience in the wine cellar.
This wine is ideal with rich meat dishes, stews and mature cheeses, but can also be enjoyed on its own to appreciate its layers and character.
