Regular price €23,80After an international career as a sommelier and oenologist, Raúl Moreno returned to his native region of Seville. In the heart of the sherry area, he produces still wines that focus on grape and terroir, moving away from traditional wine styles. His approach is experimental but respectful of classical regional techniques such as flor aging, spontaneous fermentation, skin maceration, and the use of amphorae or old barrels. He works with unique, limestone-rich terroirs in and around Jerez, expressing them with precision and often surprising character.
La Inflexión is a lively, unfiltered blend of pinot noir (60%) and syrah (40%) grown on albariza soil in Carrascal, a terroir well known in the sherry region. Both grape varieties are hand-harvested in multiple passes and fermented as whole clusters in open vats. Raúl applies a lesser-known technique here: carbonic maceration inside one-way permeable bags following the Australian ‘Hickinbotham’ method, which produces a riper, more floral profile than traditional carbonic fermentation. After fermentation, a two-week post-fermentation maceration follows.
The wine is aged in Taransaud and François Frères oak barriques. It combines the spiciness of syrah with the elegant, floral notes of pinot noir, resulting in a playful yet balanced style that surprises both structurally and aromatically. No fining or filtration is applied. La Inflexión is playful, aromatic, and juicy. An accessible red wine with a fresh profile, soft acids, and crisp texture.
