Assailly is a family-owned estate with a long-standing tradition in the heart of the Côte des Blancs. Since 1899, the Assailly family has carefully and devotedly cultivated ten hectares of vineyards, entirely planted with chardonnay. The estate is located in Avize, one of the most prestigious Grand Cru villages in Champagne. The vines benefit from a unique southern exposure and chalk-rich soils, resulting in elegant, mineral-driven champagnes of exceptional finesse.
All champagnes from the estate are produced as blanc de blancs, exclusively from chardonnay. The house style is refined and refreshing, focused on precision, purity, and terroir expression. Vinification follows traditional methods, with a meticulous blending of different vintages to ensure balance and consistency. A portion of the production is aged on lees for several years, contributing to the complexity and depth of the final wine.
