Crystallum Mabalel pinot noir 2023

The Mabalel pinot noir comes from a single vineyard on the 'Kaaimansgat Farm' at an altitude of 700 meters above sea level, surrounded by high mountain peaks that are often snow-capped in winter. This pinot noir therefore revolves around its 'altitude' or altitude. The large differences between day and night temperatures cause a delayed ripening that gives the fruit time to generate complex aromas with freshness. The natural fermentation takes place in stainless steel tanks for about a month and a half. After pressing, this noble juice matures for about a year in oak barrels (20% new barrels). This very complex pinot noir therefore requires some extra oxygen in a decanter and the finest glassware.
