The wine undergoes fermentation and maturation in wood, followed by a long maturation sur lattes. This time on the yeasts provides extra roundness, richness and volume, which enhances the complexity of this cuvée. The Parcellaires is a tribute to the early years of the estate, which was founded in 1899, and reflects Vincent's vision of how champagne was made at the time. It combines the traditional values he inherited from his ancestors with the modern techniques he now applies.
