Raúl Moreno El Proposito 2023

Raúl Moreno Yagüe produces wines with a strong personal vision, rooted in tradition yet driven by experimentation. After 23 years of international experience as both sommelier and winemaker, he returned to his native Seville. In the heart of the sherry region, he creates still wines that begin with the grape and the terroir, often using techniques like flor ageing, skin contact and spontaneous fermentation. Working with old vineyards on calcareous soils, he brings precision, depth and elegance to the future of Andalusian wine.

El Propósito comes from the Miraflores pago, one of the most expressive terroirs in Sanlúcar de Barrameda. The vineyard is planted with very old palomino vines (clone 84) on north-facing albariza soils. This wine is a pure, floral and linear expression of this unique site, completely removed from the classic sherry profile.

After a gentle foot-treading of 2 to 3 hours, the whole bunches underwent a 7-day maceration without destemming. Following a soft pressing, spontaneous fermentation started in open vats. The must was pressed just before fermentation was completed.

The wine was aged for 8 months under a veil of flor: partly in used manzanilla oak barrels and partly in chestnut casks that previously held amontillado. The result is a still white wine with tension, depth and subtle oxidative complexity. El Propósito is floral, spicy, saline and lightly smoky, with a distinctly gastronomic profile.

Produced in small quantities and unique each vintage, this wine always reflects its vineyard origin, the year’s conditions and the character of the grape.
