Domaine Fabien Duveau, led by Fabien since 2008, manages forty vineyard parcels in Chacé according to organic and biodynamic principles (certification pending). Natural ground cover and manual soil cultivation ensure a balanced relationship between vineyard and environment.

‘Hauts Poyeux’ is a 100% cabernet franc from vines planted in 1980 on deep layers—up to 120 cm—of falun-like, limestone-rich sands before the underlying clay subsoil. The vineyard, with natural grass cover between the rows, is farmed entirely organically and biodynamically (Demeter certification pending).

After hand harvesting and sorting, the grapes undergo spontaneous fermentation with indigenous yeasts and a traditional vinification without added sulfites. The wine is then aged for approximately twelve months in barriques, contributing subtle oak notes alongside its mineral richness.

On the nose, ‘Hauts Poyeux’ displays a compact, smoky character with underlying red fruit aromas. On the palate it offers concentration and suppleness, with elegant tannins and a long, layered finish. Annual production is about 4,000 bottles.
