Regular price €33,80After an international career as a sommelier and oenologist, Raúl Moreno returned to his native region of Seville. In the heart of the sherry triangle, he creates still wines that focus on grape and terroir rather than traditional wine styles. His approach is experimental yet rooted in classic local techniques such as flor maturation, spontaneous fermentation, skin maceration, and the use of amphorae or old barrels. He works with distinctive, chalk-rich terroirs in and around Jerez, translating them into expressive, precise, and often surprising wines.
La Quimera is a 100% pinot noir grown on chalky albariza soils in Carrascal, a subzone of the Jerez region known for its finesse. The grapes are harvested by hand in multiple passes, then undergo micro-vinifications in open-top tanks, with varying percentages of whole clusters. Fermentation is spontaneous and followed by a two-week post-fermentative maceration.
The wine matures in second- and third-use oak barrels from Taransaud and François Frères. The result is a deeply aromatic, sensual pinot noir with a fine-grained phenolic structure and tension between fresh acidity and savoury minerality. Aromas of violets, blood orange, sour cherry, rhubarb and raspberry unfold in the glass. Mouth-filling, silky and layered.
