Regular price €27,80Raúl Moreno Yagüe returned to his native region of Seville after an international career as a sommelier and oenologist. In the heart of the sherry triangle, he produces still wines that focus on grape and terroir, without being confined by traditional styles. His approach is experimental, with a respectful nod to classic regional techniques such as skin contact, flor ageing, spontaneous fermentation, and the use of old barrels. He works with forgotten or undervalued vineyards on chalky soils and brings them to life with precision and character.
La Retahíla is a characterful orange wine made from perruno, a rare local grape grown in a century-old vineyard on the chalky barajuelas soils near Trebujena. It's a powerful yet refined wine that expresses the Sanlúcar terroir in a surprising and layered way.
The grapes are harvested by hand, gently foot-trodden in whole bunches without destemming, and fermented in clay amphorae. During the three-week fermentation, the cap is gently punched down twice a day. After soft pressing, a natural flor layer forms spontaneously. The wine is aged for 10 months: 80% in old chestnut barrels that once held amontillado, and 20% in stainless steel tanks — both under flor.
La Retahíla is intensely mineral and saline, with a fine-grained texture that evokes airborne sand during an easterly wind. Its aromatic complexity is reminiscent of Alsatian pinot gris or riesling, rather than southern varieties — with notes of candied citrus, nectarine, apricot, almond, honey, and exotic spice.
