Eichhorn is Manincor’s parcel expression of Pinot Blanc, originating from a carefully selected vineyard in the Liebeneich zone near Terlan. This 300-metre-high slope faces southwest and combines a mild, windy microclimate with mineral-rich soils of sand, clay and weathered porphyry. It is a place that produces grapes with aromatic refinement and a pronounced, salty minerality.

In the cellar, subtlety and softness are the decisive choice: eight hours of skin contact in the press provide extra depth, after which spontaneous fermentation and maturation on fine lees take place in wooden barrels for nine months. This creates a wine that shows both texture and elegance.

In the glass, Eichhorn shines bright lemon yellow. The nose is refined and delicate, with aromas of ripe apple, white blossom and a hint of wet limestone. On the palate, it is juicy and precise, with a lively acidity and a long, minerally underpinned finish reminiscent of wet stones and citrus.

Eichhorn is both gastronomically applicable and ideal for simply enjoying. Serve slightly chilled in a large glass, and if young bottles, decant briefly.

Perfect with light fish dishes, seafood, vegetable dishes or goat's cheese — and an excellent aperitif for those who love a wine with detail.
