Coste & Fossati comes from the two top plots Coste di Vergne and Fossati that were planted by Aldo Vajra between 1975 and 1985. These plots have since been cultivated completely organically with the greatest care. The dolcetto d'Alba grapes are planted on a white marl surface that protects the vineyard from the heat and, after the harvest at the end of September, are placed in stainless steel tanks for 7 months. A spontaneous malolactic fermentation takes place and during vinification the whole is turned twice more to give more extraction and depth to the wine. On the nose we have scents of ripe blackberries, thyme and cherries. In the mouth we are spoiled with flavors of dried mint, small red forest fruits and a very long finish that is beautifully balanced with elegant acidity. In its youth, we recommend opening the wine 30 minutes beforehand and then serving it in a wider glass. It is ideal to serve it at cellar temperature. Dolcetto d'Alba at its best if you ask us.
