Mas Simsó Negre 2021
Regular price €18,30Simsó Negre is made from Garnacha grapes, from vines between 25 and 47 years old, planted in a subsoil of slate and clay. The vineyard, with an area of 0.74 hectares, is located on a hill at an altitude of 370 to 390 meters, which allows it to enjoy natural cooling during the hot summer months.
After careful hand harvesting, the wine undergoes a 48-hour cold maceration followed by a 27-day fermentation, with the grapes immersed daily for maximum extraction of flavour and colour. The wine is then aged for 12 months in first and second year French oak barrels to develop depth and complexity.
The aroma reveals ripe cherries and plums, complemented by a subtle spicy note. When tasting, the cherry returns, supported by beautifully balanced tannins and refined acids. To allow the wine to come into its own in its early years, it is recommended to open it 15 minutes before serving. This versatile wine is a wonderful example of modern viticulture in Priorat and is suitable for various occasions. Cheers!
