Mas Simsó In Perpetuum 2021
Regular price €29,90Perpetuum is the showpiece of Bodega Simso, and the name refers to the ambition of the winemakers to create a wine with ageing potential. The terraces on the Simso mountainside are mainly planted with Garnacha Negra, supplemented with approximately 20% Carignan. The slate soil and vines of 25 to 47 years old contribute to the unique character of this wine.
After manual harvesting, the wine undergoes a 48-hour cold maceration, followed by a 27-day fermentation with indigenous yeasts. The wine is then aged for 16 months in new French Allier oak barrels. On the nose, you will discover aromas of ripe blueberries, wild strawberries and subtle wood tones. On the palate, the spicy character emerges, together with ripe fruits, while the mouth-filling tannins in the finale provide a long, rich finish.
This powerful wine requires a hearty meal. Decant it about 30 minutes beforehand for optimum enjoyment, especially if you like powerful red wines. Cheers!
