Top reference to Riesling outside the well-known regions of Europe, Canada's cool climate also makes this a top place to do viticulture with this beautiful grape. This riesling comes from the ridge 'Beamsville Bench', where the vines overlook Lake Ontario. The combination of a lime/clay soil and gently sloping slopes provide the typical characteristics of large Riesling. After the harvest, the grape juice is given a short, cold maceration with the skins, after which the alcoholic fermentation continues in stainless steel with native yeasts. After fermentation, the wine matures for another 8 months on its 'groin' in the tanks, minimum use of sulfites.
This wine is characterized by a very intense nose of tropical fruit, stone fruits, light floral and with honey notes. In the mouth, the wine is very fresh and tight with the typical crunchy acidity, characteristic of Riesling. A slightly rounder middle structure sizzles for a long time in the mouth.
